Beignets

Aside from great Cajun food, New Orleans has a few other regional specialties that are quite yummy. Beignets, for one. Cafe Du Monde takes credit for beignets in New Orleans. If you're not familiar, a beignet is basically fried dough smothered in powdered sugar. Think funnel cake in a different shape, if that helps.

At Cafe Du Monde, they've got a machine that takes the dough and presses it into little rectangles.

Then they toss them into HUGE fryers (luckily, I ate them BEFORE seeing this...I might have thought twice about eating an entire order of 3 beignets)

Once cooked...drop a few on a plate, cover in powdered sugar, and grab your insulin. Posted by Hello
